Salad with Roasted Figs and Burrata

INGREDIENTS
1kg Figs, cut into quarters
2tbsp Manuka honey
1pack Hydroponic rocket
50g Walnuts, chopped
1pack Burrata cheese
50g Prosciutto di Parma
1tsp Extra virgin olive oil
1tsp Balsamic vinegar di Modena
DIRECTIONS
Place the figs onto a baking tray and drizzle with honey
Place into a pre heated 180 °C oven for 10 minutes
Take out the figs and allow to cool
Wash the rocket and drain of the excess water. Place the rocket salad on a large round plate or platter
Add the Burrata cheese in the middle of the platter and make a cross in it so it opens up like a flower
Place your thinly sliced Prosciutto slices around the cheese
Sprinkle the walnuts all over. Drizzle with olive oil and Balsamic vinegar
SOUTH STREAM TIPS
A very refreshing spring or summer dish. You can also add any kind of Citrus fruit like Orange or Grapefruit to this. Serve with some nice freshly baked Ciabatta
