Roasted Bone in Veal Rack

INGREDIENTS
1 whole French-trimmed bone in veal rack
1 sprig of Thyme
1 tsp Mustard powder
1 tsp Garlic powder
1 tsp Onion powder
Salt and pepper
2 tbsp Olive oil
10g Organic salted butter
DIRECTIONS
Trim of the excess fat of the veal rack
Mix all the spices together and rub all around the veal rack
In a screaming hot pan heat, the oil and place the veal rack inside. Pan fry on both sides until you have a nice brown crust.
Pre- heat oven to 180°C
Arrange the veal racks with bones intertwined and standing straight up on a rack in a roasting pan.
Roast in the oven for 1 hour and turn up the heat to 220 °C
Roast for another 10 minutes and remove from Oven
Cover with Aluminum foil and rest for 20 minutes
