Fennel Salad with Smoked Salmon and Orange Vinaigrette

INGREDIENTS
1pc Organic fennel bulb
50 g Smoked Salmon
1 pc large orange
10 ml Avocado Oil
Salt and Pepper
DIRECTIONS
Wash the fennel and cut very thinly with a knife
Place the sliced fennel in Ice water. This will ensure to keep the fennel crispy
Peel and segment the orange
Juice the rest of the orange in a bowl and mix with oil and season with salt and pepper
On a flat plate place the fennel in a circle, season with salt and pepper and sprinkle with avocado oil
Roll the salmon into rose shape and place on top of the Fennel in some distance around
Place your orange segments around the plate nicely and sprinkle the orange vinaigrette over the Plate
Garnish with green Fennel tops
